Did you know that Mermaids love Nachos too? Sometimes my Nacho research takes me to great depths, and this Halloween the Blue Moon guided me on shore to try the Nachos at a new restaurant in Venice, CA called Nueva. It’s a fun, relaxed, Covid-friendly outdoor Cantina with a modern approach to classic dishes from Mexico, from Chefs Vartan Abgaryan and Mesraim Llanez. Definitely add the Chicken Tinga and let me know how you like their special nacho topping: Chickpeas!
Fourth of July food for the Family should always include Nachos! This star spangled batch was a 10-minute meal made with leftover meat and veggies and topped off with Grandma Barbara’s famous guacamole. We paired it with carne asada tacos and some ice cold Leiny’s Summer Shandy. We used some festive blue corn chips that crisped up nicely — don’t forget the foil base for easy cleanup.
Something that all parties can agree on! Election Day is the perfect time for a strong foundation of Blue corn tortilla chips to celebrate Midterms 2018. Pair with some Peach salsa as you watch the results roll in. Happy National Nacho Day!

Nachos now a National issue — thank you Mr. President. And thank you to all who have supported this important cause over the years, our voice has been heard, and Nachos have risen to the top! And, what better day to celebrate than Super Bowl Sunday! #SB50
Aloha & Mahalo. Eyes closed, Sunnies on, floating off into Paradise in the pool overlooking Hanalei Bay. I can hear Zac Brown Band Castaway playing even though my ears are under water. I sense a shadow drifting over me, and as I peek open only 1 eye, I see a vision in white…could this really be happening? Then I hear those 2 words that I have been dreaming about my entire Life…Poolside Nachos?
Yes please! The Poke Nachos at Nalu Kai are a local must-have when Vacationing in Kauai. Chopsticks, Maui onion chips mixed in, fresh Avocado, and creme fraiche wasabi. Locally sourced, amazig, melt-in-your-mouth fresh Ahi Tuna! An Aloha twist on a traditional favorite.
Step aside Birthday Cake. No need for candles this year. All I really want is a big plate of Island Nachos at Kalypso, side of Pineapple salsa please, a double rainbow of fruit flavor. Shredded slow-cooked Kalua Pork & the local Kona Wailua Wheat on draft. Perfect chip-to-cheese ratio. Birthdays can be a time of reflection, a chance to set new goals for the year ahead, and re-invent yourself. While change is good & necessary to grow, some things in Life will never change, like a sweet plate of Nachos!
It’s Hallows Eve, and the night is darker than ever on the mystical Island of Kauai. You can hear the deadly waves crashing at Queens Bath, palm trees rustling in the tropical winds, and night creatures stirring for the local kukui nuts.
